BBQ Chickpea Tacos

Saute cabbage in olive oil

Saute chickpeas in a little barbque sauce

Microwave corn

Slice avocado

Chop green onion

Use low carb tortillas or corn tortillas

Top with cilantro and a little bbq sauce and/or sour cream

(You can substitute greek yogurt for sour cream, mix cumin and black pepper into the greek yogurt)

Squeeze lime over all

Purple cabbage- Calcium, Iron, Magnesium, Potassium, Vitamin A, B1/thiamine, B2/riboflavin, B6/pyridoxine, and C, Fiber

Corn- Iron, Vitamins A, and C, Fiber, Protein

Green onion- Omega3-fatty acids, Beta carotene/ Vitamin A, B9/folate, Vitamin C, Vitamin K
